Eating desserts as a diabetic sounds like a big no, but, you just have to know how to do it! Diabetics can enjoy something sweet for dessert, it just takes a little planning. When planning a dessert it is important to look out for increased protein, more fiber, more plant based fats, and less sugar.
- 2 Medium spotty bananas (this is important!)
- 1 small peeled avocado (we'll need to mash it)
- 1 large beaten egg
- 1/3 cup of maple syrup
- 1/4 cup of avocado oil
- 1/2 cup rolled oats that you will ground into powder (you can use a blender for this)
- 1/2 cup of choclate chips
- 1 tablespoon of baking soda
- 1/2 tablespoon of baking powder
Serving size
This reciepe is enough to make 12 muffins by using a muffin tin
Directions:
1. Preheat Oven to 350 degrees
2. Mash your bananas and avocado together in a bowl
3. add your wet ingredients such as egg, syrup, oil and vanilla extract together
4. combine all your dry ingredients such as powdered oats, baking soda, and baking powder
5. Mix all your ingredients together, the ingredients in steps 2-4
6. Slowly and carefuly add in your chocolate chips
7. Using a muffin tin, grease it up or have liners inserted into each muffin slot
8. Use a spoon or ice cream scooper to trasnfer your muffin mixture into the muffin tins
9. Bake muffins for 30 minutes or until you can successfuly insert a toothpick and the middle comes out clean
10. Once they are done baking, let the muffins cool down and enjoy!
