Here's how you do it:



  1. Cauliflower 

  2. Oil of your choice (we recommend diabetics avoid oils made from soybeans, corn, rapeseed, and cottonseed) 

  3. Seasoning, herbs, and flavoring of your choice! 

Prepping the Cauliflower for rice: 

  1. Wash your cauliflower and pat dry

  1. Remove any outer leaves and break down the head of the cauliflower into uniform pieces, including the stems! Don’t leave anything out!

  1. Chop your cauliflower into fine, small pieces (you can do this using a knife or even better- food processor) 

  1. Heat oil in a pan- Add the rice to the pain and any additional spices you’d like or even some veggies such as onions or garlic!

  1. Sautee-  Usually from 3-5 minutes or until the rice is the way you like it - it should be softer but not mushy

  1. Optional - If you want to opt for some more flavor in your rice you can use different kinds of seasonings, herbs, and vegetables to achieve this. Such as adding lemon to the sautee for a lemony flavor!

  1. Serving & storing - This is a perfect side dish to replace rice and it can be stored in the fridge for 4 days (cooked)
