As the months get colder and we settle into the winter temperatures, soups are becoming a staple in our dinner routine. Maybe you aren’t feeling well and need

a delicious pick-me-up soup. This recipe for chicken soup is perfect because it is packed with nutrients and it is delicious. We love to share great reciepes that are good for you because often times diabetics are more prone to foot related issues. A perfect way to treat your diabetes is by eating healthy and sticking to foods that will keep you feeling your best. Let us know

 

Ingredients: 

1 TBS avocado oil 

4 cloves of garlic minced

½ yellow onion, finely chopped 

2 large carrots thinly sliced 

1 celery stock, finely chopped

1 TBS ginger (fresh, if you can) 

1 TBS of fresh grated turmeric OR 1 teaspoon powder turmeric 

4 cups of low sodium chicken broth 

1 pound of boneless chicken breasts (or whatever you like) 

½ teaspoon salt

1 cup couscous 

⅔ cups of frozen peas

 

Directions: 

Step 1: In a large soup pot add your avocado oil to medium heat. Add your garlic, onion, carrots and celery. 
Step 2: After the onion has browned, add in your chicken, ginger, turmeric, broth, and salt (or any seasonings you’d like) 
Step 3: Once soup has been brought to a boil, add in your couscous
Step 4: Make sure your chicken is covered in the broth 
Step 5: Once chicken is done you can take it out and shred it with two forks 
Step 6: Add your chicken back and add your frozen peas
Step 7: Add more water or seasoning if you need to/would like to 
Step 8: Enjoy!
