You do not have to give up your beloved mashed potatoes this thanksgiving season because we have got a great recipe that everyone will love and yes, it is diabetic friendly! It is quick, easy, and delicious. Let us know if you try this out and tag us on instagram @stopfootpainfast !
Ingredients:
1 ½ pounds of potatoes
5 tablespoons of fat-free half-and-half
¼ cup of greek yogurt plain (this is replacing sour cream)
4 teaspoons of unsalted light butter
¼ teaspoon of salt
⅛ teaspoon of pepper
Directions:

Peel and cut your potatoes into slices

While you are cutting and peeling your potatoes, let a pot of water boil

Once the water is boiled, place your potatoes into the water and allow it to continue boiling on medium-high heat for about 15 minutes or until potatoes are tender

Drain your potatoes well

Using an electric mixer or a potato masher (by hand method) mash your potatoes until smooth

Add in your 3 tablespoons of half-and-half and continue beating it in

Add your plain greek yogurt, butter, salt, and pepper

Continue mixing until smooth and combined

Add the other 2 tablespoons of half-and-half to thin it out

Once it is to your liking, enjoy!
